Spicy Mango Margarita

We’ve kicked up the typical south-of-the-border cocktail with the tropical flavor of mango and a sassy punch of spice. Use one pepper for a gentle burn, or two peppers if you really like it hot.



Ingredients:


1 Tbsp coarse sugar (such as turbinado or demarera sugar)

1 Tbsp kosher salt

1 tsp ground cayenne pepper

1 or 2 Lindsay® Hot Chili Peppers

1 tsp coarse sugar (such as turbinado or demarera sugar)

1-1/2 oz reposado tequila

1-1/2 oz Cointreau (or other orange liqueur)

2 oz mango juice

1 oz freshly squeezed lime juice

Fresh mint, for garnish



Directions:


Stir together the salt, sugar, and cayenne in a small bowl. Transfer to a saucer or a small plate and set aside.


Salt the rim of an old fashioned glass: Wet the rim of the glass in a saucer of water, then dip the moistened rim in the prepared spicy salt mixture. Fill the prepared glass to the rim with ice.


In a cocktail shaker, muddle the hot chili peppers with the coarse sugar until the sugar crystals dissolve and the peppers are a rough pulp. Add the tequila, Cointreau, mango juice, and lime juice to the shaker; add ice and shake until well chilled.


Strain through a fine strainer into the prepared old fashioned glass. Garnish with a sprig of fresh mint.
