Add all the ingredients to a shaker and fill with ice. Shake for 10 seconds and strain into a cocktail glass. Garnish with a watermelon cube coated on one side with ground black pepper.

Add the peppercorns to a small saucepan over high heat and shake gently until fragrant. Add the water, bring to a boil and cook for 3 to 5 minutes. Strain into a measuring cup and add enough additional water to measure 1 cup. Add the honey and stir until it dissolves.

4 tablespoon pumpkin purée
4-2ounces bourbon
8 ounces apple cider
Pinch apple pie spice
Ginger ale
Fill cocktail shaker with ice. Add pumpkin puree, bourbon, apple cider, and spice. Shake well and strain into cocktail glass filled with ice. Top off with ginger ale. Garnish with apple slices dipped in cinnamon sugar, if desired.

4 ounce simple syrup or maple syrup
4 teaspoon pumpkin puree
Pinch pumpkin pie spice
Dash pure vanilla extract
16 ounces Prosecco or Brut champagne
Stir syrup, pumpkin puree, spice, and vanilla in the bottom of a tall glass or champagne flute. Top off with Prosecco and serve immediately.
